Rita, the tomatoes finished cooking, and I was ready to put them in jars when
the power went off. They didn't cool down much while the power was off, but
I reheated them, canned them up, and put the cans through a water bath (boiling
water with cans submerged) for 15 min. Other vegetables I use the pressure canner.

A neighbor used to freeze whole tomatoes, and she said as long as she let them
thaw before cooking, that they tasted similar to canned.
