You can cut them up and can them in a light syrup. Works nice in the winter for apple crisp, pies, or just to dump on a stack of pancakes. Have your tried apple butter? It's great. I make it in the crock pot. I like to mix a lot of differant types of apples when I make it. Also do that with apple sauce. You can pickle them too, make spiced apples. You can get the recipes from an internet search.
