We harvest it just as it is starting to produce the seeds. You can shake it a bit and some seeds will fall out. So take the heads and put them in a 5 gallon bucket and set it in a dry place out of the sun. Over the next few days the seeds will finish ripening and you can then shake the heads into the bucket and the seeds will rain down. Then sift and winnow as usual and you'll be all set! Thumbs up
