Yellow Squash, yellow squash and more yellow squash, I can't keep up with it. This morning I decided to try making bread with some it and I hit the nail on the head with this recipe.
I'm calling this my Almond/Cranberry Crusted Yellow Squash Breakfast Bread
3 eggs beaten, 2 cups of organic sugar, 1 cup of veg. oil, 2 teaspoons of vanilla. Mix 3 cups of flour, 3 teaspoons of baking powder, 2 teaspoons Ceylon Cinnamon, 2 teaspoons of ground nutmeg. Add dry ingredients to the egg mix and mix til incorporated. Fold in 2 cups of shredded yellow squash.
Pour into two 6 x 6 square pans or 8 x 5 pain (brownie pans). Top with crushed almond and dried cranberries (did my almonds and cranberries in my bullet).
Bake at 350 for 30-40 mins depending on the pan size or when a toothpick inserted in center comes out clean.
Cool 5 mins and cut into brownie size pieces and enjoy with a cup of tea or coffee.
