My mother used to make Dandelion wine. I remember we would sit and pull the yellow fluff from the flowers and we had to be careful not to get any of the green leaves in it. My neighbor when I was a kid, used to make salad from the greens.

Multi colored dandelions would make the yard cheerful. Would be sort of sad to mow them though.

I tried the new leaves in a salad and they are a little too bitter for my taste, but much better than ground elder leaves, which are also supposed to be good for you. I made some syrup from the dandelion flowers, it took me an entire afternoon to separate the petals from the rest (in part because I was greedy and picked several litres of flowers Rolling my eyes. ) and the result was less exciting than I had hoped, but at least now I can say I tried it. In future, I'l stick with the rhubarb and elderflower syrups - much easier to make and tastier too. Thumbs up
Of course I talk to myself; sometimes I need expert advice!

Thanks, Most of my bloom is near the house, the outer ones are just starting. These two warm days have them moving along now. A couple more open today.

One set of my Grandparents came from Denmark....and LOVED elderberry ANYTHING, syrup, soup, jam, you name it. All of their "kids"(my Dad, and his sisters and brothers,and ALL us "grandkids", thought that "elderberry = nasty" Sticking tongue out ....Rhubarb, on the other hand, Thumbs up

My mother used to make Elderberry jelly, and wine too. She only used the dark black ones, never the red. I made some jelly a couple of years ago, and realized I didn't like it that much, but I guess it's really healthy.
