I eat as many as I can just fresh , give away a bunch, and when I get too many I make fresh salsa , or bag them and freeze for chilli or pasta sauce in the winter.

The salsa is simple just things from the garden tomatoes, peppers (salsa and a little ancho) garlic, onions and cilantro.
If I have them I use roasted peppers

As for freezing I make it simple just onions peppers and tomatoes in my blender till smooth , pour into a freezer bag and freeze. Just too busy or lazy to things that take time, and I hate to waist fresh garden produce .
It is the base for chilly or pasta sauce , also great in veggi soup.

I made my first batch of sauce this past weekend. Took all of the slightly cracked/bruised,etc and threw them on a big pan with some onions, garlic and herbs. Put the whole thing in the oven for about 90 minutes until the skins got nice and caramalized. Ran everything through the food mill for a nice fire-roasted sauce that I put in freezer bags.

I used some of my tomatoes to make a batch of salsa yesterday. I like it hotter, will have to use more jalapeno next time. It made pretty much, but it's gone already...

BLTs with avocado.....sauteed zucchini with fresh tomatoes......thick sliced tomatoes alongside deep fried zucchini....thin sliced tomatoes on ham sandwiches......heaven! Drooling

The fresh salsa I made wasn't hot enough for my guys , but sitting overnight in the frig brought out the heat and then it was too hot for me Rolling my eyes.
