Hi everyone. Been a busy few days for Dave and I. They finally started repairing our roof.
They'll be back tomorrow and finish up Tuesday. They finished patching the leaks. Next they will sealing and weather coat it. Hoping the rain we are supposed to get will hold off until Wednesdays so the can quickly finish. Looks fairly ominous outside today though. Rain is supposed to be on it's way tonight and our night temps have been really cold in the low 30s and high 20s. The high elevation areas are seeing snow and we may see frost. I've been covering the plants nightly hoping they stay dry. Cacti can do cold or wet---the combo of both will turn them to mush.
We had a nice but busy weekend. Opted to skip the gym since my back was hurting and just got our 10,000 steps in doing the art walk downtown. Really fun and a great way to check out the local artist's work, murals, sculptures, etc. Yesterday we caught up with our friends Laura and Greg. Just met out locally and grabbed a coffee and quick bite for lunch. Last few days we've finished up leftovers and Dave made pizza! It came out good.
Also been enjoying some awesome sunsets and striking mountain views.
Donald...Nice looking fish dinner. I like Pollock. It's a real mild flavored fish and reminds me a lot of Cod or Haddock. I rarely see it here but will buy it if/when available.
Amanda---Lasagna, YUM! I love lasagna and one day may get ambitious enough to make some from scratch soon. I already have some sauce and meatballs in the freezer so that's half the work done. Hmm....now I'm getting ideas.
Bob--- Glad you like Puttanesca sauce. I found a great recipe from "Cuisine At Home". Easy, not too fussy and most of the ingredient's you probably have on hand to make this. I used fresh fillets that I got at TJ's. They were a little pricier than frozen but they were worth it and made the dish sing. I have used frozen fillets before and they worked out nicely. Just have to defrost and make sure they are very, very dry before adding or else they make the sauce overly thin and a bit watery. Let me know if you try this; I'll be curious to hear your opinion on it.

Tom...Salmon looks super great and glad it reheated well for you. Now you'll have to get creative with that second half.
Ann---Sorry no response on the Hosta Society meeting. I can't say as I blame you for not going especially considering the travel time and expense of a motel. Better safe than sorry. Hope you get together with them soon. In the meanwhile enjoy that shrimp!.
