Good Afternoon all,

Good eats all around and it sounds like everyone has managed to use up the last of their holiday leftovers. No exception here. Yesterday I did the fridge inventory. Spotted some leftover steak, 3/4 of a red bell pepper, 1/2 of an onion and a jalapeño that all needed to be used up. So, I did what came naturally---made fajitas. nodding Perfect amount for a generous fajita each. The black bean and corn salad was a perfect side which got a bit of fresh cilantro. And because it was there, I tossed the last of the broccoli on the plate too. Nice and easy dinner. Glass of red to go with.

Dave and I did breakfast this morning. Nothing as fancy as poached eggs but just simply scrambled along with some sausage and toast. Simple, fuss free and good. It was nice to have breakfast together for a change. I'm going to make Cod Puttanesca tonight. Looking forward to some good pasta and seafood. Pics of that to come. Not sure what's on the menu for the rest of the week but as usual, I'll figure it out.

BTW....Does anyone knew what TT is up to these days? I'm all ears! She hasn't been around lately.

Sally...so sorry you're sick. Are you feeling better today? Group hug Take care and hopefully it isn't anything serious and will clear up quick.

Sean...The DO's Ajiaco looks quite tasty. Does it freeze well? Would be nice if you could freeze it.
As Donald pointed out, it is difficult to halve or reduce a lot of ingredients. Is there a second meal you can plan that uses a lot of the same ingredients? Thinking Cuts down on both leftovers and waste. Also good looking eggs. Nicely done.

Donald...Very nice meal. I tip my hat to you. The maduros look very tasty. Sounds like you found a new favorite wine to enjoy.

Tom...That's awesome your long-time friend could reconnect and meet up with you for lunch. Smiling What a great way to spend the day. Beautiful pie and I'm sure they appreciated it.

Tom, you make beautiful looking pies and I am sure they taste as good as they look. I would love a slice of the rhubarb pie with a big scoop of ice cream. Drooling

Thankfully I used the last of the leftovers last night, there was one large roast chicken breast left, I sliced it and a few other small pieces in gravy and served over egg noodles, side was steamed broccoli dressed with a little maoli and parm. It was pretty good for leftovers.

Yum. Boneless chicken thighs baked with sweet/ spicy sprinkle. Potatoes cubed and skillet fried. Cabbage and mixed garden greens cooked ( braised?) with butter and apple cider.

We pulled out some prepared pork from the freezer and some frozen wild rice, primarily because I've got quite a bit of broccoli and cauliflower in the fridge that needs to be used. But it made for an easy dinner.

I'm trying to figure out how to assign handbells for the next term and beg the various subs I know to play with us. I was 1 person short in handbells this year, which we've covered often by using our church music director. Then I got a "Happy New Year" message from the strongest ringer in the bunch (the one who plays with 2 and sometimes 3 groups and doesn't care where she rings and can pick up the 8 1/4 lb bell like a toy, but can also easily ring four-in-hand with the little bells). She said, in essence, sports are very important to me and I've got an opportunity to play volleyball at the same time as your rehearsal; so goodbye! That leaves me with 9 ringers - if they are all there and I need 11 to cover a basic 3 octaves of bells. We've got almost 5 and the same of chimes. I've sent out an SOS to those on my sub list. January looks OK, probably February too. March, I'm down to 7 to start with. Will probably have to look at different music.

Amanda I haven't done tuna casserole in years. Not one of my favorites, but I don't mind it.

I had some leftover pork roast and decided to make roast pork hash. I've made roast beef hash before, but never with pork. So I thought I'd give it a try and it was good. I also had some lightly sautéed spinach and some Pinot Grigio. Something soft was nice after my dental appointment today.

Thanks for the good word (and acorn tip, Grill!) on the egg benny. It was delicious. For those who think they can't make a poached egg with just a pot, here's a method to try... it's not so tough, especially for all of you who cook...
-Start with just poaching one egg before going for two or more.
-Use a medium sized sauce pot and bring water with a bit of salt to a boil,
then turn it down to simmer.
-Crack an egg in a small prep bowl or similar.
-Add a splash of vinegar to the simmering water, and stir the edge of the simmering pot, to make a mini whirlpool.
-Drop the egg in the middle and continue to stir a bit.
By the time an English muffin is toasted, the egg is done. 3-4 minutes is typical for most tastes.
Give it a test; you'll be surprised.

Tonight, my usual pair of guests weren't here... only one of them. Andy decided he'd prefer to be eating my cooking tonight. Terry worked late.

It was a crispy Buffalo chicken thigh dinner (a few wings on the side, too, as I know Andy eats!), with blue cheese dressing to tame the heat, sauteed asparagus, corn on the cob (finished with butter and smoked paprika), and oven fries. Happy plates, mouths and tummies all around. Plus, Andy does a fine job cleaning the kitchen! Smiling

Yesterday I made some oatmeal brown sugar cookies using some old fashioned oats..another request..in went nuts, fried fruit or chocolate chips..another request

Day before I roasted a chicken..darn thing cost me $14 bucks..I guess when they leave out the salt injection and antibiotics and process here in the good ole USA..it costs more? I had a hard time deciding if I wanted to eat it or put it in The Will and stick it in the safe! It was great ..the skin was very crispy and the gravy was great. Served with a side of rice pilaf and a salad.. make a chicken soup from the carcass and got 4 1/2 quart containers ..just added carrots and onions.. and froze it. The flat noodles will be added when I serve

Christmas dinner was a mess. Seriously. All the finicky eaters ..I fixed a bunch of food.. put it all up on the counter in casseroles and crocks.. and they served themselves.. the kids helped with the casseroles and the struffoli

I used foil pans..no way was I washing pans. I did use china.
I didn't take many photos ...I can't remember if I ate. Glad when it was done..we all had a good time

Sean, Buffalo chicken thigh! Good idea, a bit more meat and I'm sure just as tasty. Good idea Sean. I too add a bit of vinegar to the water when I make poached eggs, although I don't make them often.

Chocolate chip muffins. Every time I make muffins, I scoop into all the wells, then have to go back and find the ones that need more batter. And it's not obvious. And somehow, they all come out pretty equal after baking.

I was thinking the same Bob. My MIL's good friend and neighbor Stella used to make us Struffoli every year at Christmas time. She fussed and made hers in the Christmas tree shape, what a job!

You really outdid yourself Rosie, I would love to eat at your home. Since we only moved to NC on the 22nd, we were sort of exhausted but we did buy a couple of filets to grill on Christmas but then we were so tired I put them in the freezer and we had sandwiches. Shrug!

Good rainy morning all,

Cold, wet and rainy today. It will stop early this afternoon and not much more is predicted for the rest of the week but the temps sure are going to take a nose dive. It will be in the 50s all week and in the low 30s for evening. Time to cover the plants starting tonight. Yesterday was our last really nice day of 68 and the sunset was amazing. Spent a little time outside on the back patio admiring.

Dinner turned out real good. Cod Puttanesca is such a tasty and easy dish. Bonus was I had everything on hand and it used up some lingering pantry/fridge items not to mention cooks up quickly. I should figure it into the rotation more often. It got a generous topping of fresh parsley and a squeeze of lemon. Fantastic meal with a big salad and glass of red.

Sean, what you describe for poaching eggs is exactly what I do (except I forgot the bit of vinegar this time). I find it works well.
