If you could grow only one vegetable, one that would provide the most nutrition for you and your family, what would it be?

You're right, Gloria, I wasn't thinking about the eggs.
I still eat eggs periodically when I can get them from my farm friend in the next county over, not as in a breakfast egg, but in cooking.

Tell you what, when you smash those beans just go ahead and add chopped veggies and seasoning and maybe mix a little mashed potato or turnip in with it. I'll bet it will be just fine without the egg and without the stuffing. The chopped fresh veggies will provide a bit of liquid and it might work. I have a can of black beans, a potato, the onion and bell pepper, and I'll add some limas or butter beans. That will work, I'm almost positive. I'll let you know tomorrow. How's that?

Vegetarians can be ovo-lacto or not. Vegans do not use any animal food, which is probably a delusion because if you eat a raw organic carrot, there are probably animal microbes in there. I do make yogurt and kefir and use them regularly. I started out as a macrobiotic vegetarian some 45 years ago, and that venu has served me well, except some ten years ago I was diagnosed with diabetes and had to cut out the pasta, bread, and potatoes, and most grains.

Oh gosh. I just love potatoes and white bread. Don't know that I could do without either of those. But I believe in healthy eating you as long as you are eating healthy then this is very good.

I could never go vegan. I do eat lots of vegetarian meals but then I also eat meat. But vegan, no I could never manage that. I like eggs and animal products. I love chicken.

Sometimes it isn't really a conscious choice; I just never liked the taste or the feel of meat on my tongue. Still don't, though I will eat fish but only sometimes, and not always. It's the same with other foods, I despise beets and really don't like cooked carrots. And if I bump into a stringy sweet potato, then I'm off sweet potatoes until I forget about the stringy part.

But beans have always been my staple. If I eat nothing else, I'll always eat beans. I don't have potatoes very often now that I think about it, and rarely do I have bread, though if I happen to have yeast rolls from my neighbor, who makes the very best breads, then I eat yeast rolls.

And I love nut butters. @vic was telling me about making her own nut butters and I might start doing that. She even adds honey when she make it. Lots of protein to be had when you don't eat bread, and there are other sources of carbs too.

I think moderation is the key in most things.

And cinnamon is also a spice that is good for you. Combined with honey, you get a double dose of good, and with nuts, wouldn't that triple it?? Big Grin

Funny how tastes differ. My mom when I was growing up, not the most creative cook in the world. We had some sort of meat and lots of potatoes on most meals. Rarely any veggies. Never anything exotic like sweet potatoes. I never ate a sweet potato until I grew up and moved out. Rolling on the floor laughing And while most kids grow up with peanut butter and jelly, I Never even tasted peanut butter until again, I grew up and moved out. Found I hated it. Probably because I had never eaten any early in life.

But texture, I never thought of that. Don't care if the sweet potato is stringy. Love the taste of meat, love all sorts of seafood including just about any fish. Lobster, shrimp. Eat sea food a lot. But eat chicken most often.

I bought chicken thighs and veggies for chicken soup today. I make the best home made veggie chicken soup in my crockpot. Yummy.

Oh I love beets, you already know I love beans. Carrots are not my favorite but a small amount is okay by me.

I don't like peanuts that much either. I think so often by the time we get them they are a little rancid. I do like tree nuts, seeds, beans, yogurt and kefir and they are all good sources of protein. Of course we are taught that things like spinach are carbohydrate not protein, but spinach and most vegetables actually do have quite a lot of protein in them, and well as traces of healthy fats.

Rather than moderation -- a little of this and a little of that (which would not be healthy for a diabetic) I would go for whole foods--as close as possible to the way it grew.

I know nuts are a good source of protein but I just hate them.

I can't imagine that anyone would hate freshly shelled walnuts or pecans in season. So good - by themselves, in a salad, on fruit, or with roasted vegetables. If you have old rancid nuts (as most peanuts are, I think) I can see why you would not like them. Also, remember that peanuts are not really nuts, they are legumes. Tree nuts are the ones that are full of essential Omega 3 Fatty Acids, minerals, and antioxidants. Nuts should be eaten raw, or freshly roasted or toasted at home. "Smoked" and roasted nuts usually have added ingredients that deteriorate the flavor of the nuts.

I have a friend who sent me one of the medium sized post office boxes filled with fresh pecans from her tree for Christmas. So good!! I am having pecans with everything!

I often have a cinnamon caplet cause I read that cinnamon is very healthy.

Well I don't use cinnamon and beans together, but I suppose it might enhance Boston Baked Beans.

When I found out that cinnamon had anti-diabetic properties I started using a lot of it. I "invented" a concoction that can be used instead of "cinnamon sugar". It has no sugar in it, but it does have a full dose of fiber, stevia, chromium, iodine in addition to the cinnamon.
I toast flax seed until the seeds pop, then using the cinnamon- chromium supplements --6 or 8 of them- and more cinnamon besides, plus a scant tsp of cayenne pepper, a packet of stevia, a pinch of iodized salt (for thyroid). This can flavor berries with kefir or yogurt, or be used like cinnamon toast, or steel cut oats with cinnamon+blueberries or what ever. Sometimes I change out the flax seed for sesame seed, or chia seed (do not toast the chia seed).

A sniff will make you smarter, and the cayenne pepper will clean out your sinuses!
