I'm not sure of their current nationality--they started out Italian for sure but they are breeding with something...

Dirt, what IS that fabulous purple/fuchsia bloom in the last shots? I bet it won't grow here but I'd sure like to find out.

I was wondering about the flowers in the first shots, are they also alliums?

The spiny thing is


it comes on really blue and then fades to a kind of steely color

the others are drumstick allium

(seems like they grow everywhere, but I don't really know?)

Well, yes and no.
Folks do call it a thistle; it is kind of 'thistley'; but it is really different from what I know as a thistle.
I am so NOT the authority on these types of things...but the internet says

Eryngium is in the family Apiaceae, which is the hollow stem family of carrots, parsley, and celery--whereas the vast majority of thistles are in that big, fat family Asteraceae, which is all those things with composite flowers like asters, daisies, sunflowers, dandelions, and thistles

Well not on a flower but a twig. No fabulous colors but still special in a quiet way.
