I do all kinds of stuff with it but never thought of boiling it. I am gonna try it.

Yup, lots and lots of green tomatoes here also. Wish some would turn red already.

I have so much kale, I want to freeze some for smoothies for long after the kale is done. Anyone have any experience doing this?

Janice no such thing as too much Kale.........
I do freeze some for smoothies for the winter. I wash, rinse, spin dry and break into smaller pieces then place in sm. ziplock baggies. When your ready to make your smoothie just drop the frozen Kale into the blender, no need to defrost it. I do the same with Blueberries.

Kale chips is another option you might like for extra Kale. Wash, rinse, spin dry the Kale. Take out the rib section of the leaf and break the Kale into chip size pieces. Put cut pieces of Kale in a bowl and sprinkle about a teaspoon of olive oil over the leaves, sprinkle on sea salt and toss with your hands. The Kale will turn a deep green color when all mixed. Place the coated leaves on a sheet pan and spread them out. Bake in a 375 degree oven for approx., 8-10mins. You want the chips nice and crisp but not browned. Remove to paper towel to cool and place in a tupperware container or eat them right away.

Karen, you are one busy gardener! Rita, I have boiled yellow squash, mashed with a potato masher, removed as much liquid as possible, then put butter, salt, & pepper on it.....great sub for mashed tatoes.....I think I got the idea from Victory Garden cookbook which I've had about 40 years!

Does anyone have a good recipe for Beets. I acquired a 20lb bag of beets. They are just starting to sprout in the bag. I usually just cube them then toss in olive oil, salt and pepper and roast them. I don't think I could eat 20lbs though by myself. I'd hate to see them end up in the compost.

Cold beet soup is awesome.......boil the beets & let cool.......dice and add to cold veggie stock....add grated cucumbers & diced onion, fresh dill..... pinch of ground cloves, salt, pepper, TBL of vinegar....add a scoop of sour cream if you like .....Also you can pickle beets.....You can use just a good cucumber pickling recipe & can them.....or, pickle them & keep in fridge for several weeks....

I am so glad I Learned about the boiling of the squash. I would never have thought of it on my own. But I am a big lover of boiled potatoes. Well, any sort of potatoes. So I think I will like the boiled squash.

Marilyn the beet soup sounds great. I'll give it a try. I did boil some of the beets this morning and then peeled a couple and diced them. Tossed them with an apple, some dried cranberry's, walnuts and some feta cheese dressing and ate it over a bed of fresh picked lettuce. It was yummy. I diced the rest of the cooked beets and froze some and saved the rest in the refrig for smoothies and more salad. Next week I'll cook the rest and make some soup.

It is a humid summer feeling day. I decided to start two new to me types of summer squash seeds. I had these seeds from last year and I had bought them at Parks seeds. But this spring knew I did not have room for every type of squash that I had seeds for.

But now I have some extra room and really want to try the two varieties called Magda and Italian Harvest.

Its warm, the seeds will pop up quickly.

Picked my first two cucumbers, two hungarian sweet peppers and a yellow squash this morning along with lettuce, swiss chard, kale, basil, tons of rosemary, peas and a handful of bush green beans.

The newly planted pole beans are already a foot tall in just 4 days. Got some more lettuce seed planted before the drizzle started. My first patch of lettuce is trying to go to seed on me. Looks like something dug up my new peas so replanted again and put a cover over it to keep them from trying again.



I think the tomatoes are starting to change color but that could be my imagination as I so want a warm tomato to bit into.

I picked a few more cherry tomatoes last night, Still eating them before I can get them home! Yummm! Any day now you will be tasting that 1st warm, just picked tomato! Also picked a few cukes, tons of lettuce and kale. And I froze the kale for smoothies like you said Karen- easy peasy! Have more kale and lettuces coming, thought both would be done by now! Shrug!

Karen, your garden is going great guns!!! But your beans are growing so much better tan mine. Mine are still really small plants.

I did pick lots of zucchini and summer squash this morning.


I took the common green ones and sliced them up already. They are sitting in the marinade to grill layer. I am trying both Ranch and Asian style this time.

Grilled squash is the best for bring out the true flavor!!!!! Rita your ahead of me in the squash department. My Dad is the one supplying me with Zucchini and I supplying him with yellow squash. I like to do a cajun spice on the zucchini before frying, it's yummy.
