Big eating this weekend has made for several choices of leftovers tonight. I'll likely revisit the bit of stir-fry I have, and add some fresh veggies. Lunch was a tasty bowl of long-cooked onion soup. I didn't do it full out French style, but added crostini to it that I made with a mix of cheddar and manchego cheeses on sliced chiabatta . Recommended!

There...the groceries have been put away. Sticking tongue out Hubs took our list and did the commissary shopping. Stocked up on frozen pot pies and frozen pizza among other things. He got everything on the list and then some...german cookies, bratwurst, polish sausage, tortilla chips, con queso dip...he's a snacker right after dinner. He is extremely slim even though he eats more than I do...burns it all off doing yard work and vegetable gardening.

Next dinner I will cook chuck roast using beef stew seasoning mix and ranch dressing mix. I think this is @Newyorkrita's recipe?

Still not up to much so we did take out chicken and broccoli quesadillas and wings and salad. My husband is a good caretaker to a point...he doesn't cook but can order Whistling Hilarious!

@Whitebeard - McCash hash is mashed potatoes with vegetables mixed in and it was very good.

The meatloaf plans changed here due to two packages of beef that smelled horrific. They'll be in the next dump run. So I was left with 1.5 pounds of ground pork but had already put the stuffing, mushrooms, eggs and heavy cream in the giant bowl. I added the pork and hoped for the best. It was great! Anyone who loves stuffing would enjoy using it in place of bread in a meat loaf. Do you hear me @RitaNY?

I don't use the ranch dressing/ Only the beef stew mix.

Would a package of onion soup work just as well or does it have too much spices. Couldn't find blade so got chuck roast.

A woman from church gave me a cabbage, sausage and tomato soup today. It was entirely new to me and very tasty! I saved a cup of it, but it's a bit to meager to call a meal, yet I just might have to fill it out some. Perhaps a small tomato, a little more sausage, and a splash or two of white wine (that always seems to bring out the goodness). Smiling
Ms. Pirl, so glad the meatloaf was a nice tasty surprise after the sorry adventure with the beef. Herb and bread stuffing (should I ever have enough of it) sounds like a splendid addition. Hurray!
Continued healing, and warm and happy eating all around. No clue about dinner tonight, the last of the dinners alone this week, but I'm about to pop open a Guinness and see what falls out of the refrigerator that's begging to be eaten. It's sure to be something hot though. Winter has decided to visit here tonight.
