My friend made the most delicious home made vegetable soup. She based it on chicken stock and then added all sorts of veggies. Summer squashes and eggplant from my garden, onions and kidney beans that she had bought.

So she brought some over earlier today. I already had a taste, So we went exercise walking just now and so funny as were then both going home to eat yummy soup.

Our house guests left today. It's a good thing the four of us don't get together too often. I'm not sure we'd survive. We're getting too old to act like idiots. Hilarious! Such a good time!

The food tour that I did with my friend was good and a lot of fun.

Tonight's dinner was Caprese salad, chicken Marsala on Texamati rice, and leftover roasted squash and parsnips.

I was invited for dinner at a home of church members tonight. Had a nice Waldorf-type salad for starters, and pot roast served on egg noodles, roasted cauliflower and beets on the side. The salad was the best part for me. Not cooking after a busy day was bonus.

Quiet here, and for once I'm ahead of the curve. Hope you're eating well!

Just up from dinner. I got a delightful surprise call from the soup kitchen yesterday. One of the volunteers just harvested some of his oysters and was looking for takers. I snagged two dozen, and gave half to a dear friend. Tonight I took to opening them. Some we had on the half shell with cocktail sauce, and I reserved some to use in a sauce on top of linguini with shrimp. The dish also included some baby eggplant (from the CSA), and fresh parsley, along with ample oil, butter and garlic (!!). A nice crispy piece of baguette and some Sauvignon Blanc rounded off the meal. A nice way to finish off the week. Smiling

We went out for a late lunch, BLT and french onion soup for me and burger for hubs. No need for dinner.

Rosie, no pearls, but a pearl of a dish. I trust the white fish (perhaps corvina?) was good. When I'm feeling sufficiently delinquent, I cut thick white fish into bite-sized pieces, batter it, and fry the goodness up. Every since I was a kid, fried fish has been a favorite.

The DO decided on beef short ribs tonight. They were seared and are now slowly braising in the oven. Onions, carrots, celery in the mix along with aromatics, largely from the garden. We'll have them atop some egg noodles, along with some nice oven-crunchy bread. It's a great smell in the house at this hour. Leftovers are guaranteed.

Prayers out to all who are dealing with Matthew.

Rosie, I'm a couple days late on this, and you may have figured it out. Grilling it or baking it whole is always an option.
You can bake it, too, as done in this recipe. ( The timing here looks about right to me) Baked Corvina Fish Fillets with Tomatoes:
350gm cherry tomatoes
1 tablespoon shredded lemon zest
8 cloves garlic, bruised
1-1/2 tablespoons salted capers, rinsed
1/3 cup (80ml) olive oil
4x120gm firm white fish fillets, such as snapper
lemon juice
sea salt and cracked black pepper

Preheat the oven to 350F. Place the tomatoes, lemon zest, garlic and capers in a baking dish. Drizzle with half of the oil and bake for 20 minutes. Add the fish fillets to the baking tray, drizzle with the remaining oil and cook for a further 15-20 minutes or until golden and cooked through. Drizzle with lemon juice and sprinkle with salt and pepper. Serve with the tomatoes and a green salad. Serves 4.

I cannot believe it!

I did bake it like
I would salmon...light flavors... butter..a wee bit saki.. a tiny bit sweet chili sauce...but the fish needed something with some more butt!

It was a thick ( cooked double time salmon) white flaky fish..

But like
I told hubby..it needed tomatoes..cheese ...garlic...something to give it a run for its $$
