Been on the run. It was leftovers for much of the week, and out to dinner on Wednesday. I ordered something I almost never do: a crispy half-chicken. It was very good, but way too much, especially after the calamari appetizer we shared (yum). Tonight I'll be turning the chicken into something -- perhaps burritos or chicken quesadillas, or I'll go with a meaty chicken noodle soup. The Dear Other isn't due until close to 8, so there's time to see how the muse moves me... well, that and the pantry.

The chicken, by the Dear Other's request, became a nice chicken noodle (vermicelli) soup and was one of the better batches.

Last night's fare was served at an engagement party which was very similar to many a wedding reception. Open bar was nice -- Guinness on tap, and a nice house merlot -- and the food offerings were surprisingly good. To start there were piping hot appetizers, including a new one to me -- fried chicken cordon blue bites (balls), all served by waiters during cocktail hour. Dinner was a buffet. Oddly enough, the marinated flank steak with onion rings was cooked medium rare and carried fine flavor, yet the eggplant rollatini was a little lackluster. Good Caesar salad.

Tonight was a first-of-the-season beef stew with ample veggies, including a bit of recently harvested local peppers, served over a touch of egg noodles. It made for a right decent meal for a cool night. Wishing you well.

That engagement party fare sounded very good, and Yum on your first of the season beef stew. I'm nearly ready to make some here. I love the idea of using your peppers!

I put peppers in EVERYTHING, BUT, never thought to put in a BEEF stew! See, I am set in my ways and would emphatically deny it ( shame on me! ) I am going to try the peppers. We have a few weeks more til stew season!

Tonight, I will make chicken cutlets ( breaded and fried ) - no noodles. This is their first dinner and evening with DD away for her surgery and I don't want to make the kiddies stressed so will feed them what I know they eat CHICKEN AND NOODLES AND NO VEGGIES!!

...it's gonna be a long few days..........

My friend made tomato veggie soup and shared some with me. I had some last night and it was really good. She also brought some home made mac n cheese so I will have soup and mac n cheese for dinner.

We had a feast over the weekend camping trip...chile, sausage and peppers, meatballs and pepperoni, mac n cheese, baked beans, pickled tomatoes, cheesecake and moonpies....I'm still stuffed and I didn't even mention the alcohol Whistling Tonight won't be much, most likely soup and sandwiches Shrug!

Been noshing here during the day. Just had some parmesan crisps -- so good and easy. I'm about to return to the chicken noodle soup. Perhaps some crackers with sardines on the side. Leftover stew (and there's a fair bit of it) will wait for another day soon.

DH keeps buying SARDINES ....but he never opens a can!

I fixed chicken cutlets confetti style... so colorful! . Baked beans, salad with nuts and apples and cranberries and thes cpvanilka almond granola clusters I found in DD pantry, broke up linguini and served with a chicken mushroom gravy ... they ate iypt...it was not " yukky"

Making a BEEF stew with carrots, potatoes, corn...let the howling commence.....,that WILL be yukky. I may strain some of the liquid and shred some of the beef and serve over egg noodles to the YUK Patrol

Your mention of sardines reminds me of one of our favorites. We love to just open a can of kipper snacks and heat it to serve with eggs. My husband and his family did this for years and it sounded very yucky to me til I tried it.

Putting granola clusters on that type of salad sound wonderful! Gotta try that. Smiling
