It has been a very, very long time since I did my own sauce. I know I could as I have lots of tomatoes in the summer. But not much time.

You'd end up getting a bunch of tomatoes and other home grown veggies. Hilarious!

Eating my spaghetti now. Bad habit sitting at my desk and computer eating. But I got really hungry already so decided I might as well eat.

Potato pancakes... love them. Never had them from Trader Joe's (none around here), just home made.

Here tonight veggie and chicken stir-fry, served with a bit of rice. Peppers were particularly good (and I have more of them to get to). It was pretty okay but only that, in spite of a touch of peanuts and spice heat. I felt I should have made something with crunch to accompany it... or at least crisped the rice. Yes, I'll admit it. In my book, fried and crispy wins over the pretty tasty and "I'm sure this is healthy." Perhaps it's mood; some how it left me with a tempura craving. I'm seeing that in my near future.

Guess everyone is busy again. Last night I made an "Enlightened Fettuccine Alfredo" with chicken breast, first time I had made it and it was pretty good, DH really liked it, and a Caesar salad.

Tonight we are having bacon, eggs, and Bush's beans, bread and butter.

Last night was quick and easy, sliders and French fries with pickles on the side, applesauce for dessert. Not really post-worthy.

Tonight, however, was the best meal in a while, yet not easily duplicated. It was dinner for one. I made roasted tomatillo salsa verde this afternoon, so had it on hand. I also had most of a thick pork chop, and another that was basically the bone with some meat on it (uncooked frozen leftovers from a previous dinner). The meat was surprisingly good, as if it were fresh. After defrosting, I deboned the one, and cooked what Cubans call "masas de puerco frito" -- dusted and fried pork bites. I dressed the bites with the salsa inside a tortilla, lightly browned in a bit of the same cooking oil. Filling included a touch of chopped young cabbage, dressed with rice vinegar, olive oil and salt, added a bit of jack cheese, and topped with sour cream. It was one delicious taco. I broiled the bones with the meat and munched them on the side. Plus I had a few tortilla chips to the plate for a bit of crunch. It was one of those rare times that everything worked.

He had me at the browned bones.

I toss d togetherbsome meat sauce..cur left over porch ( chops) and ground beef ..and some beef cubes from stew..l promised to be awful and damn if it was not good. Served over ziti with a big plop of ricotta on top of the mound

Salad with romaine, Honeycrisp apples, tiny sesame sticks, cranraisin things, and honey cashews. Topped with a blueberry vinegrette ( bottle)
