Last night was quick and easy, sliders and French fries with pickles on the side, applesauce for dessert. Not really post-worthy.
Tonight, however, was the best meal in a while, yet not easily duplicated. It was dinner for one. I made roasted tomatillo salsa verde this afternoon, so had it on hand. I also had most of a thick pork chop, and another that was basically the bone with some meat on it (uncooked frozen leftovers from a previous dinner). The meat was surprisingly good, as if it were fresh. After defrosting, I deboned the one, and cooked what Cubans call "masas de puerco frito" -- dusted and fried pork bites. I dressed the bites with the salsa inside a tortilla, lightly browned in a bit of the same cooking oil. Filling included a touch of chopped young cabbage, dressed with rice vinegar, olive oil and salt, added a bit of jack cheese, and topped with sour cream. It was one delicious taco. I broiled the bones with the meat and munched them on the side. Plus I had a few tortilla chips to the plate for a bit of crunch. It was one of those rare times that everything worked.
