The leaves are like giant crinkled spinach.

I didn't save a good pic of the whole plant. They were growing in my raspberries so I transplanted them and the plant crouched over. Maybe they will be back next year?

Your last picture is a Delphinium very beautiful.
You do have some very beautiful flowers up there in Utah, different from the ones here in Texas, although some are very similar.

It's very invasive it seems. I only found one plant like it in my whole property so I brought it closer to the house because I thought it was lovely.

It is a very lovely Penstemon, but I don't know which one of them it is, there are many.
