This isn't baking, but last October for our church's first Lasagna supper, I made all the lasagna. Just a small country church, so you really don't know how many to plan for. Our Ice cream social usually brings in about 100 or a few more. (that's tomorrow). Anyway, I made lasagna for 90. My one sister-in-law about had a cow..........a week beforehand she was wringing her hands and worrying "how are you going to get that all done??? " Wring, wring, wring...............
I told her, "that's a week and a half away, I don't need to start getting excited about it yet".
I spread it out over 3 days and put it all together the day of and we were just peachy-keen. Other than the fact that we had lots more people than we planned for and ran out of lasagna at 6:15..........supper was supposed to go till 7. One of the other gals made a little, "just in case".........she went home and got it and that was gone in 15 minutes. I made sure that I served it, because I knew how much I needed to get out of each big Nesco ...........18 servings.............and did NOT want someone shorting or giving too much. I had 4 Nesco roasters plus my 12x18 half sheet pan (which holds the same amount as the roasters).
I bought smart for the supplies, getting what I could at Aldi's...........the tomato juice and cheese and tomato paste. All they had for the noodles were those wretched no-bake ones, so I had to go to my regular grocery store for those, plus I got my meat at the groc. store too. I think I got by for $100.00 or a tad more for what I needed to buy.
I knew that the church peeps liked my lasagna because they always asked me to bring it for church special occasion suppers and I NEVER brought anything home but an empty pan..........the big pan. LOL That is why I said I would make it all. Some people make kind of crappy lasagna, and you don't want that for a big gathering. I got lots of raves on it. Made me feel good!
