My guess is that those plants are grown in a container. The soil level is lower than the top of the container and blocks light, resulting in what you are seeing. I think you would plant according to the where the crown is when it's like this, not at the white/green line which would be too deep. Those are going to be outer leaves which probably will die off anyway during the process of digging and replanting in a new home. The new growth will be fine. At least that's how I've approached them when plants ordered have had that appearance.
