Sandy - thank you for that link on making hot sauce. after reading it I see where I was literally taking my life in my hands making my hot pepper sauce. also sorry it took me so long to replay but I'm sure I have mentioned my cancer problems as the reasons for me being MIA.

Thanks Gerry hopefully mine will be here this week. I used to grow a lot of peppers years ago but due to stomach issues had to stop eating them. Decided to try some of the super hots this year even though I can't eat them it will be fun to grow them.

profesora, you have some of my favorites. I would at least add the 7 pot Primos. Hotter than reapers, and taste way better, just like your brain stains are an improvement over the red scorpions.
Kraken scorpions are pretty bad ass on having a lot of liquid inside. I remember one night, I cut open my first one and my wife complained within a minute and she was at the other end of the house.
I don't know if it is any good yet, my hopes for the next hottest pepper to grow is the CPR. I would add those. You can find all of these right here in the US. Tom

Hooboy! Hippy Seed Co. has a very large selection of peppers. I don't know where to begin...what to choose. I have been selling flowering plants at the flea market but would like to expand to include hot pepper plants.

Our native islanders almost always have "fina' denne" with their meals. This is a dipping sauce made with chopped hot peppers, chopped onions with vinegar and soy sauce, or lemon juice. For the most part we don't want it too "pika" that we can't enjoy our food. But there are those that can't get enough heat (pika). I like my fina' denne on the medium pika side, but with flavor.

Also, I'd like a pepper that when frozen then thawed for making pika paste, it will keep most of its heat. A large-size red pepper is preferred so I wouldn't have to harvest and deal with small ones that are going to be chopped by a food processor.

Given the above info, any suggestions Tom @cycadjungle? Would really appreciate a very short list to choose from. Big Grin

Cool! I hope the seeds are viable as I sure would like to grow them. Hubs is the pepper grower so I'll turn it over to him to take out the seeds and sow...then I'll take over from there Hilarious! Hilarious!

Yes, that looks like a Butch T. It is the previous record holder at 1,463,700 scovilles. As long as there is no fungus in the pods, those seeds should be very good. Take them out, clean all the placenta material off, put them on a plate in a dry place to dry for 40 days, then soak in water over night, and plant.

Need advice quickly
I'm doing my annual hot pepper jelly and instead of my Thai chili so was going to use Carolina reaper. I only have two red ones ripe, do you think that will be enough for six pints? Exactly how hot are they?

Caroline Reaper is rated at 2.2 million SHU hottest in the world to date. So 2 may be too much for your 6 pints of jelly.

I used one Carolina Reaper pepper for 12 pints of hot pepper jelly, it came out just right!
