At our tea garden at our 4H fairgounds demonstration beds, we grow; Hibiscus (Red Zinger), lemon balm, lemon verbena, apple mint, peppermint, stevia, dragonhead, pineapple sage, hyssop, chamomile, bee balm, and lemongrass. The show stopper is the Red Zinger hibiscus--the calyx are such an outstanding color later in the season....everyone comments on it.

I love chocolate mint tea! I put it in my coffee, as well. I have been growing it myself, so have lots.
Lemon verbena is another favorite! I love it on chicken or fish too, not just in tea! It has the strongest sweet lemon taste and scent of any herbs, I think.

Good to see all the interest in herbal teas going on right now.
I'm working on a blend of spearmint and dried vanilla bean. The flavors are really good but i need to get thevanilla flavor toned down some to be perfect.

I'm also considering blackberry leaf with garden sage

Infusing herbs into your coffee can be done in two ways. Sprinkle the herbs on the coffee grounds when you make the coffee.
Or use the hot coffee to extract the herb into it like you would with water.

What a nice tea collection. I got hooked originally by Celestial Seasonings Zinger teas before I started to brew my own with what's growing here on the mountain. I'm hoping that Rose of Sharon will be a similar hibiscus. First batch is almost dried.

My favorite lemon herb is lemon verbena. It's lovely in tea, but I also make lemon verbena sugar, and lemon verbena ice cream.

Can some of you tell me how much chocolate mint (fresh or dried) that you would use in making chocolate mint hot chocolate or tea? I'm still trying to learn about how much herb to use in recipes.

I love your inputs so far. As far as store-bought teas go I normally buy the Yogi brand Teas but I didn't know anything about it other than the taste. when I was looking for new tea ideas I came across this video

I would start with one leaf of the chocolate mint per cup to see how it works and then add more if i wanted more.
My neighbor uses peppermint in her regular tea and told me she only uses one or two leaves because the mint flavor was too strong otherwise.

The tea we like to drink now especially with the cold mornings, we get it in a jar, and just scoop out 2 to 3 teaspoons of its jam-like consistency and add hot water. It's ingredients are honey, citron and ginger, then I add a dash of cinnamon. yumm! Really feels good to the throat, keep it nicely moist, not itchy and dry.

We have also tried Primula teas, I like this flowering tea too Smiling Another one we liked, Repubic of Tea, lots of varying herbal combinations in it.

All of your posts about your favorite teas has brought back many memories of my different teas over the years. The thing is I'm not much of a tea drinker, but I do like a cup of Spiced Tea now and again.

Yes, I started out with all the different flavors of Mint, Lemon Balm, Chamomile, Thyme, and Sage. I drank Rose Hip Tea for a long time and I guess it was my favorite. When I'm sick with a cold I like Thyme or Sage tea. Now the only tea I drink is Spiced Tea, of my own blend. It's so easy. It's not authentic herbal, but if you have a resource for whole spices it could be very organic, but sadly mine are from the supermarket packaged in the little plastic bottles. But it's good.

I love the Red Clover teas and Dandelion teas also. So healthy! I've never managed to successfully grow either kind, so I buy them!

Sad that I didn't find this thread until now. Sad I used to grow herbs for teas. Still do I suppose. Used to have a lot more different herbs, now I have a couple but a lot of them.

Primarily I have peppermint, spearmint, a couple types of sages, thyme. Chamomile doesn't grow well for me. For a number of years I also grew stevia, but it didn't winter over and I didn't lift it into the house. If you don't know what stevia is, it's a sugar alternative. Depends on study but it's 100s times sweeter than sugar and zero calories.

Outside of growing my own herbs, I also use either in herbals or in a mixture with black or green teas:
rose hips
chamomile
tulsi (holy basil)
osmanthus
hibiscus
rooibos (maybe not an herb, but neither is rose hips)

I have my own blend for colds (mints, tulsi, sage). For stomach problems, nothing beats a sage brew and for feminine issues, I've given many cups of mint tea to females that I've worked with.

It's sort of funny. Before I posted yesterday, I had a conversation about tea with someone at work and told him I'd bring in some osmanthus for him and his wife to try. I also read an article on chamomile tea supposedly helping control/lower blood sugar. I was diagnosed in early summer with T2 diabetes. So I decided I'd test to see if chamomile helped my blood glucose level. Last night I went and got the big jar of chamomile, looked at it, said this isn't osmanthus, put the jar down, got osmanthus, made myself a cup of tea. Forgot to get a bag of osmanthus for my buddy and totally forgot that I was going to start drinking chamomile to test if it helped my T2..... the tea was good though. ;)

I'm curgently experimenting with white pine and thyme blends. Flavorings for this blend I like so far are cloves and nutmeg. I tried lemon balm but wasn't excited about that one.
