I've always used a cooling rack within a pan for the same effect.

It's a great pan Margaret, and nothing sticks to it. It's so easy to clean. It can be used in an oven up to 450°, but not under the broiler. I use it all the time to roast meats (tonight, chicken breasts), veggies, fish... as well as bacon.

I don't want the bacon smell in the house, so I cook it in my electric skillet outside on the deck. I'm sure the pigs in the barn a quarter mile down wind don't appreciate the smell either.

Let me get you interested in trying some new things, perhaps. Pork or Beef rubs. Top 3 ingredients you should be using and may not use so far. Ground yellow mustard. Ground ginger. Ground sumac. Separately or together.

Thanks, Gene. I'll try to do better than I have in the past. I have found some great spices, but then I let them sit in the spice cabinet and keep on using my old favorites. When I'm cooking, I'm usually in a hurry so I go with what's simplest. I'd love to have time to slow down and experiment.

If possible plan ahead. In a hurry will almost always wind up the same. A serious rut, IMO. While watering plants or watching a movie I'll be thinking about what am I going to do with those pork chops I just bought. What direction should I head? What will get me there? I have a huge list of the most popular spices used by country. I haven't had Armenian for a while, but I can get there. Here's another tip I can pass along. Most of my students (I teach classes about spices) tell me they have determined that they are not getting great results because they add the spices at the wrong time. You just can't throw a bunch of stuff together and expect magic to occur. Gene

OK. I Googled: Famous chefs secret ingredients. Found a promising one. Something simple. You just might already have the mixings. They said put it on everything. Google the 3 components and it also comes up as a great rub for chicken and fish. I like it. Subtle, tasty, different. About equal parts of each: Coriander (powder or ground seed,) Fennel (ditto,) a mild red pepper like - mild red Hatch (what I used,) paprika, California, Anaheim, Aji Panca. Any one of those. I'm not felling creative enough to come up with a good name so I labeled my bottle: CFH. Try it. Maybe you'll like it. Not exciting, just something nice to have on hand. I gotta try it in scrambled eggs next.
OK, tired eggs. Nice. Eggs that taste like eggs with just a hint of something else. I rate it an A. I can see where this will be a put it on everything blend. Gene

I am sure I will like it. I just forgot to order it the last time you spoke about it. I have Amazon Prime and so no shipping ...I use it a lot..the prices are comparable to what I can find in stores on sale PLUS I find exactly what I want

Ticks me off that it is on Amazon here for $49.66, Can dollars, while on the American Amazon it is on sale for a measly $13.48, that is a huge saving, wonder why it isn't on sale on the Amazon CAN. Angry

I know, it's a deal. I get several boxes a week from Amazon. My husband's razor blades cost about half of what Kroger charges. Probiotics, too. I always order those from Amazon.
