I have a coffee grinder for spice with a clear lid. I couldn't find ground bay a while ago so I put a bunch of leaves in and it did a good job of making a nice fine grind.

Here is something I just "invented." Very handy in all types of cooking. A very nice, subtle flavor. My spice jar is labeled LAP. Leeks and (bell) peppers. Start with Mother Earth Products: Dehydrated leeks and dehydrated bell peppers. 100% natural, no added ingredients. (Two items that you just may want to keep on your shelf. They also have tomato dices.) Into my new spice grinder. Now a powder. Great combo for pasta, eggs, potatoes, chicken, etc. I looked at buying leek powder but it is hard to find, large size only, and costs a lot. I can mail you a sample if you send me a Tree Mail. Gene

GREAT IDEA Gene.

I will go and order that.
Don't need a sample..but thanks for the offer.

I may get some dried mushrooms too. Not big on reconstituted mushrooms..but powdered would work and I would use less truffle oil $$

My eggs are going to be happy and cold salads too.

Got a new spice in the mail today so you know I am anxious to try it out. Grocery store had ground pork on sale. So I decided that would be my "test." Hand mix into patties in the pan. Khmeli Suneli. An ancient spice blend from Georgia (the country.) Smells great, tastes great. But subtle. Delicious ! Made my self a note to add some rosemary next time. If there ever were 2 things that were meant to go together it is pork and rosemary. Next I'll try K.S. in scrambled eggs. should be wonderful. Gene

Yes, Rosie sage can easily take over a dish. But, no good poultry rub should be without a little. Gene

Yup, I have one...............a roll-top that DS#1 made in Junior High woods class. It's still on my counter, but I haven't bought a loaf of bread in centuries. Rolling on the floor laughing I'll have to take a pic of it.

A friend stopped by yesterday and left me some Venison Landjaeger. Any one here a fan? A bit spicy but nice. Only took me an hour to do some research and create my own spice blend to imitate this. Seems it is a German, Austrian, Swiss thing. He's coming back this weekend and we're going to experiment with the venison/beef hamburger he has frozen. This will be the first spice blend we try, I think. Here's my formula (subject to change of course): Equal parts: Smoked garlic, granulated honey, ground Grains of paradise, celery seed powder, allspice powder, coriander powder and my own blend I call, FFNB. Equal parts: fennel seed, fenugreek seed, Nigella seed and Black Mustard seed - ground to a power. Tastes great. Gonna be a nice meat rub. I'm sure you already have all those ingredients handy (a joke.) Gene

Taco Stuffed Avocados aka “Avo-Tacos”
Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 6

Serving Size: 1 half

Taco Stuffed Avocados aka “Avo-Tacos”

Shopping

3 medium ripe avocados
Juice of 2 fresh limes
1 lb. ground meat of choice (I used grass-fed beef tonight)
1/2 of a yellow onion, diced
Homemade taco seasoning:
1/2 Tbsp chili powder
1/8 tsp garlic powder
1/8 tsp onion powder
1/8 tsp crushed red pepper flakes
1/8 tsp dried oregano
1/4 tsp paprika
1 tsp cumin powder
1/2 tsp sea salt
1/2 tsp black pepper
Combine spices well, you will only use about half of this mix per pound of meat, or to taste
Fresh taco toppings of choice:
diced tomatoes
fresh pico
cilantro
olives
a touch of natural cheese (optional)

Instructions

Halve avocados, brush with fresh lime juice, sprinkle with sea salt if desired.
Brown meat with the onion in a skillet over medium heat.
Once cooked through, drain well.
Add homemade taco seasoning (I add a sprinkle at a time, and taste test until it’s right) and 1 Tbsp hot water.
Simmer for 1-2 minutes until flavors combine.
Scoop hot meat into avocados.
Allow each person to top their Avo-Taco as they wish. 👌

I left her 6 for her breakfast. LOL Yeah, they are pretty good. I'll take some and leave them on the counter for the gal I'm doing "cat chores" for. They're getting home later on Sunday.
