Carrots and Evergreens and Winter Celebrations

No doubt wreaths and garlands of red and green are decorating your homes this week. I've been thinking quite seriously of making a carrot wreath for my front door. After all, it's carrots that played an important role in my winter celebrations; isn't that how traditions start?

I think what I ate was a mix of whatever greens were available or could be found.
Turnip, collard, spinach, plantain, dandelion, poke. . . actually those weren't available in January, were they? Unless canned, and I know poke wasn't something they canned. They only ate poke when the new leaves were small and fresh.

Of course now we are told that all parts of poke are toxic. Strange, since I survived years of it. But I do know to only use the fresh new leaves and if cooked, it must be cooked 3 times in fresh water with every cooking. By that time, it was very nearly mush anyway, everything had been cooked out of it, even the toxins.

Mostly I just remember the black eyed peas.

Purple raisin and carrot salad. How boring. Needs some yellow in there to liven it up.
Yellow carrots. Yellow peppers? How 'bout lime green? Shrug!

Yum, Blackeyed Peas ... a southern staple that I grew up with and still love! It's a southern a tradition to eat blackeyed peas on New Year's Day ... supposedly brings luck for the new year ahead. My family didn't always have them at that time of year but we ate them a lot. A dear friend of mine still keeps the tradition and must have blackeyed peas on the dinner table on January 1st every year ... whether anyone eats them or not!

Although born and raised in the south I've never had Poke that I can remember. Collards and turnips are another story, I do not like either. I remember my grandmother making me eat Collards, Turnips and Rutabaga's as a youngster and I swore as a grown up I'd never touch them again ... and haven't! Just the thought of having to eat them makes me cringe. I do love cabbage ... and spinach ... especially spinach/strawberry salad! All this talk of food is making me hungry, I think I'll go have a snack ... but, it won't be leafy greens. Smiling

And the odd thing is, I hate cooked carrots. I won't even eat them in soups.

I love carrots in any manner ... boiled, steamed, smothered in butter (or butter and a little brown sugar), steamed, raw, or raw dipped in ranch dressing ... mmmm I love carrots! Big Grin

Carrots cut in thirds & then halved, rolled in butter & drizzle honey over, stick in the oven & bake. Candied carrots. YUM! Easy too.

Sounds tempting, but every cooked carrot bite I ever tasted, ugh; well maybe it's the texture. I just don't like cooked carrots. I have trouble dealing with beets too.

Anni, your recipe sounds good. I might try it sometime when I have something good to eat along with. I love honey and it could easily lure me anywhere. What you said up there, 'stick in the oven', I read as 'carrots on a stick in the oven drizzled in honey' and it made me think of a treat. Shish-kabobs. Green Grin!

Well if you don't like them cooked then you don't like them cooked, Nothing wrong with likes & dislikes. We all have them. I can't hack cold pumpkin pie ---nope, won't eat it --- Yechhhhh, but warm it up & me luvs it ---- YUM! Same with egg custard pie. Shrug!

I was born and raised in Philly, Pa. A collard never passed my lips till moving to Florida. Since then, New Year's dinner ALWAYS includes black eyed peas and collards. Wealth....never happens. But I have learned to cook YUMMY collards and I always save the pot liquer (SP?) to use as a base for soup. Smiling Smiling
