Sometimes there's a simple solution to the raw veggie problem: Take them out of the vegetable crisper, where it's so easy to forget you have them, and put them on full view in the refrigerator, where you'll see them when you want a snack.

I never put anything into the vegetable crisper anymore. I always forgot about the food in there until it was spoiled. I remember a stand-up comedian once saying it should be called a "vegetable rotter." Hilarious!

In the summer I eat lots of veggies that I grow in my own garden. Often raw, straight out of the garden. Or slightly stir fried.

Good idea about the crisper. I forget things are in there also.

My favorite way to cook vegetables (Potatoes, broccoli, cauliflower, zucchini, carrots, sweet potatoes, whole garlic cloves, onions and tomatoes, etc.)
1. Preheat oven to 425 F
2. Cut your veg into 3-inch sticks.
3. Line a baking tray w/baking paper or foil & a light layer of olive oil.
4. SEASON – salt w/1 or 2 of the following: paprika, cumin, cayenne, crushed red peppers, thyme, rosemary, sage or whatever you prefer. I have been doing salt with smoked paprika, yummy! Lightly toss w/tablespoon of olive oil.
5. Spread your seasoned veg over your lined tray and roast, tossing halfway through, for about 15 min.
I have actually been placing the oven rack in the center and then putting it on the broil setting, cooks faster and gives them some crispy edges. You don't want them to overcook, you want them still slightly on the firm side. Had a broccoli, carrot, cauliflower combo last week and everyone loved it.

You can use any mix you like, or just a single veggie. I like them this way so much I end up eating more veggies than I usually do. I want to try brussel sprouts next.

Another thing that makes me cringe! Sad That whole cabbage family sickens me, although I can eat broccoli and cauliflower raw.

I like green onions and mushrooms. I hate to cook, but when I do, green onions and mushrooms are always included in the recipe. And asparagus. I love asparagus!

The noodles aren't really non-caloric, Porkpal. Hilarious! They're low-calorie and low carbohydrate. They're Japanese noodles made from yams instead of wheat. They're translucent and they taste and look more like rice noodles than wheat-based pasta. I was raised on them, so I eat them all the time. They have come up with tofu-based shirataki noodles for the American market, but I prefer the Japanese ones.

My daughter makes her diet slushies with a liquid like skim milk, coconut water or water, then adds her slow burn protein powder, a scoop of ground flax, a handful of spinach or kale, one fruit like an apple or handful of berries, a carrot and occasionally some Greek yogurt.

that was dinner tonight.

I've got something wrong with me. Not sure what, but my head's gonna explode, have zero energy whatsoever, and have had a migraine for 3 days. I'm tired of being sick all the time. I've already gone through the flu, a sinus infection, and sciatica just this month alone (well, sciatica has been ongoing for over a month.. since early Dec).

And asparagus is nasty. Yuck. One of the few veggies I can't stand.

Plain Shirataki pasta has no calories, no fats, no nothing. Zero. You can get the Shiritaki Tofu ones, those have a very low amount of caloies. I have never tried the Shiritaki Tofu blend.

Ate my health food type slurry, washed the dishes and went outside. Walked around the garden and looked at the daffs that are up already and some have buds. Those are only the very early daffs though. Going to be a long time still till any blooms.

It is so warm out I tried to take a walk but only got to the end of the block. Well, long end from my house but still not very far. It would be a nice day for a walk but my legs feel like jelly, I can't walk far. So I got to the end of the block and turned around. By the time I got back home I was dragging myself up the driveway and had to sit outside on my lawn chair on the patio to recover.

I stayed there and watched the birds for a while especially the Song Sparrows. Cute little things. They are always hanging out around the garden.
