Hmm. I thought I responded to this, but guess I got interrupted.
We do have a crockpot! But I've done these successfully in just a soup pot with a good lid. I like to put whole tomatoes, one or two, along with onion, garlic, and bayleaves.
My hesitance is that my cousin doesn't eat meat and I am not sure how much the smell of it cooking for that long might be a problem for her. I have to give this some thought.
