Ann, I am so sorry that you are having so much problems once again with your gluten issue. You better be good so you can get back to the regular gluten diet. Group hug Group hug Group hug

In the hospital and at discharge ..we had the patients add tablespoon of oil (corn mostly but can be any oil desired and on diet ) to the shakes...it "disappears" taste and texture wise ...adds meaningful calories and more importantly for our COPD patients, does not add to the burden of breathing as the carbs calories do.

Fruit and veggies seem like a good lunch to me.

Things I have used as my idea of a healthy light lunch or snack are a yogurt and banana, bowl of special k cereal. bowl of oatmeal, larger serving of either lima beans or peas.

Coconut Oil might be a good choice. I take coconut oil everyday. Of course I take my fish oil cap too because I need that.

I just had my morning smoothie shake. It is Soy or Almond milk with scoops of either Whey or Goats Milk Protein, Garden Of Life Raw meal and Garden of Life Perfect Food Raw.

Breakfast was sliced banana and strawberries, kale greens stir fried in butter to which I then cracked 2 eggs in & scrambled so it was egg & kale scramble and a glass of milk. It was delicious!

Lunch - Thick black bean soup which I had thrown a fried pork chop in from the start of the beans so the meat fell apart & I got the nutrients from the bones. I put a big dollop of sour cream in the center. Was going to have 1/4 avocado but too full to eat it right now so I'll have that for snack between now & dinner.

Did you know that dried black beans provide 15% of iron? Awesome!

Kale greens give you 206% of Vit A. No wonder it's a super food! My Vit A was tanked & that shows malabsorption since I eat a LOT of carrots - a LOT. With the # of carrots I eat I should be OD'ing on Vit A instead of below normal range.

I always wonder if the soil for the growing of the veggies didn't have enough nutrients so the veggies didn't absorb as much as they should.

I can't imagine they would grow correctly then Rita and the rest of you don't have vitamin & mineral deficiencies to the point that you feel like crap.

I guess I hadn't thought of that. Really I wish I had some helpful suggestions. It seems you are so limited due to your gluten issue.

But it makes sense that when your lacking in certain vitamins and nutrients then you don't feel great. Really so sorry you have to deal with this!

Thank you Rita & Margaret.
I survived going gluten free; now I just have to go farther. I will survive this too. I am a survivor.
I know it seems hard to imagine embracing this diet but when food makes you sick enough it's not hard to let go of it. I walk through the grocery store & the bakery section and see these pastries, cakes, cookies and breads -- all gluten filled & it makes me want to curl my lip. They don't tempt me one bit. I may as well be looking at rat poison. I don't even remember what real bread (gluten bread) tastes like anymore. I know the stench of it turns my stomach.
It's not the foods I miss, it is the convenience.
Except BAY-CON!!!!!!!!!!!!!!!!!!!!!! But I'll be okay with that too.
When I'm a sassy 103 lbs. again, I will eat bacon again.

I hope you can get back there and grab your bacon again, Ann. It has to be one of the best things to eat, even though it's not healthy. That is an iresistable smell!
