I like to make ginormois cinnamon rolls and caramel pecan rolls, mostly because nobody else makes breads. I'm talking ginormos, like, 6 in a 9x13 pan. LOL. I make dinner rolls too, but cheat on that one and make the Rhodes frozen ones. People just buy them up like crazy, and you know, I really Do "bake them myself".

I will make some of my cranberry bars too.

I made this chicken the other day and we really liked it. Sticking tongue out

Caramelized Baked Chicken Legs

Ingredients

2 1⁄2 lbs chicken legs

1 2⁄3 tablespoons olive oil (to help it stop sticking to the pan)

1⁄2 cup soy sauce

2 tablespoons ketchup

3⁄4 cup honey

2 -3 garlic cloves, minced

Salt and pepper

Directions;

Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.

Line a 9x13 inch pan with heavy duty foil, makes clean up easier.

Place chicken in baking dish;

Mix together the oil, soy sauce, ketchup, honey, garlic, salt & pepper to taste. (I added black pepper and a couple of
shakes of cayenne pepper to spice it up)

Pour over the chicken.

Bake in a preheated oven for one hour or until sauce is caramelized.

I served some of the extra sauce in small cups to dip the chicken in, delicious!

Could also be used wings or pork ribs.

Gads, tomorrow will be a day of flour flying.............baking for Wednesday's church bake sale. So far I only have 1 pan of cranberry bars I'll need to plate up and 7 bags of granola. I put 1/2 pound in each ziplock........to cover the cost of the ingredients I think I will have to charge at least $3.00 per bag. It's sure good, tho. Green Grin!

Got me. I posted them because they sounded so good.
I became allergic a few years ago. Cant go near crab ..😔

But a pound of crab meat with scant amt of crumbs made about 7-8 decent sized crab cakes ( 95 percent meat)

I used to buy wild caught blue at costco...BEST around
So it will depend on how big you make them..I would say with that recipe you ought to get decent appetizer balls for 6 -7 people ..not meal but appetizer - if all eat crab ..morevthan that, I would double. I am so jealous,

Been collecting bags of pecans (this is our first year in this house with 3 pecan trees; I believe the subdivision was previously a pecan plantation - every house has a pecan tree). What nut cracker do you use and recommend? I see several on Amazon.

Also what do you do with all the pecans? I need easy recipes, please.

Cheap Ham glaze.

Baked whole ham
15lb ham on bone (cheap Ham)
1 ½ cups of Orange Marmalade
1 cup Dijon mustard
1 ½ packed brown sugar
Whole cloves
Trim hard outer skin & excess fat (I freeze this & use for Ham & beans later).
Put in a large roasting pan and score criss cross pattern.
Roast at 300 degrees for 2 hours then remove from oven &increase heat to 350 degrees while you mix the above ingredients.
Stud ham with cloves and each scored cross.
Brush entire ham surface with glaze. Brush 3 more times during cooking (about every 20 minutes or so)
Cook another 1 ½ hrs.
Cool for 30 minutes and serve.

If not using a bone in ham, skip the trimming part. You will probably have to adjust your cook times a bit too.
Enjoy! If ham is already sliced, skip the cloves part.

@ChefDebbie, are there any salt substitutes that are worth using? We are trying to go low sodium and it's tough. Most of my spice blends are full of salt, and nearly everything we buy has added salt. Do you have any good no salt tips or recipes?

In no particular order my favorite on-line suppliers for spices and especially salt free blends: Spices, Inc., Savory Spice Shop, Spice Jungle, My Spice Sage, Olive Nation. If you are going to put together n order from any one of them, please allow me to try and help by suggesting must haves from that supplier. I have 128 jars of spices and blends from 39 different countries. Years of experience. Gene
