Lunch: Southwest spaghetti squash boats.

I saw a recipe for this somewhere, can't find it now, so I made up something similar as I could remember.

I cooked a spaghetti squash whole in the microwave- let cool a little- then slice in half and removed the seeds.

Mixed the filling and sauteed: 15 oz can of tomatoes and 8 oz can of corn, both no salt added. Added diced leftover chicken and southwest seasoning (some Mrs. Dash, extra chili powder and cumin, cayenne pepper). I filled each half of the squash with half the mix, drizzled the squash with a little olive oil, topped with shredded cheese, then baked for about 15 or 20 minutes. It was very good, even my husband ate it.

(I had half an avocado diced on mine too)

Just received a news letter from a local garden center thought I would share it in case someone would like to try this. My DIL made roasted pumpkin seed which were very good so these may also be good, I might just have to buy a pumpkin and give them a try.

Salted Caramel Pumpkin Seeds

Ingredients

3 T granulated sugar
¼ t ground cinnamon
¼ t ground ginger
1/8 t ground nutmeg
2 cups raw pumpkin seeds, rinsed and pat dry
Nonstick cooking spray
1 T butter
1 T each brown sugar and granulated sugar
½ t salt

Preheat oven to 300 degrees. Line a baking sheet with parchment paper. In a medium bowl, mix sugar and spices. Add seeds and toss to coat evenly. Spread on the baking sheet and spray with cooking spray. Bake seeds until lightly golden 20-25 minutes.

Melt butter in a large nonstick skillet over medium heat. Stir in sugars and salt; cook until deep golden brown, 1-2 minutes. Reduce heat to low and stir in seeds; coat with buttery caramel mixture and cook an additional minute. Remove from heat and let cool before serving.

I wasn't harassing you at all, Karen @kqcrna. Sorry you took this so personally. I posted the recipe for all to use. And yes, everyone has different needs, dislikes, and likes. DH has had 2 primary cancers so we avoid all chemicals and food sdditives the best we can. That defines "healthy eating" to me. I eat my yogurt/yogurt cheese plain and savory so it's not about me at all. Sweetened yogurt or yogurt with fruit is a great dessert or me. Sometimes we have to depend on store food in situations. Other times I can prepare a clean-eating option. It's hard to eat perfectly clean.

I googled it and there was one snippet that said to dry it in a 150-200 degree oven for a couple hours, then slice into slivers.

This can't be healthy but it sure looks good!

Sometimes when we make a pot roast, we usually keep some leftovers. You can use those leftovers to make a whole new meal! Check these sandwiches out!

You’ll Need (for the sandwiches):

2 cups of leftover pot roast
8 slices of sturdy bread.
3 tbsps of butter (and more for the bread).
2 medium thinly sliced onions.
8 ounces of sliced button mushrooms.
2 minced cloves of garlic.
Salt and pepper.
8 slices of Colby Cheese.

You’ll Need (for the sauce):

½ cup of mayonnaise.
3 tbsps of steak sauce.
A dash of worcestershire sauce.

How to:

First, microwave the pot roast to heat and butter one side of the bread.
In a large skillet, melt 3 tbsps of butter, add in onions and mushrooms and cook over medium high heat. Keep stirring until the onion is soft and the mushrooms brown.
Add in garlic, some salt and pepper for taste and cook and stir for 30 seconds.
Set aside.
Over medium high heat, heat a griddle. Place a slice of cheese on the unbuttered side of 4 slices of bread. Top with ½ cup of the pot roast, add on onion and mushroom mixture and the other slice of cheese. Once finished with all 4 slices, top with the other slices buttered side out.
Grill the sandwiches and flip so the other side is browned and crispy too.
For the sauce, mix together the mayonnaise, the steak sauce and worcestershire sauce and serve with the patty melts.

Why not call the company? And also ask if it will void the guarantee on it if you do it?

That sounds reasonable. Anna, if God had wanted you to eat avocado pits he would have given you much bigger teeth! Just be happy eating the yummy avocado which is so good for you.

Speaking of avocados...5 large for $7.99 is the best I can find (at Costco.) gasp! The small ones are OK. But if I want to use them in dishes they are too small. Mom and Dad used to own an avocado farm. It hasn't been this bad in decades!! Sighing!
