Not being over weight is really great. Healthy weight and healthy eating habits.

I have been slim, very slim, for most of my life. Did gain after my husband died from just making poor choices. Well over 10 years ago lost the weight and stayed at 120. I thought it was all good as I easily did not gain even though I ate lots of sweet stuff. But I was getting so stiff and sore. Inflamation.

Some people don't get the stiffness and soreness. Some get it far worse than I. But I learned about diet and the gut health and the interaction between all this and started to change my eating. It has wotked for me. I feel so much better.

Today in the break room,
the Puerto Rican doc cooked!

Large pot of rice....and
black eyes peas with ham bone,
and small pieces of sweet potato!

It tasted good and smelled good!

I'm sure it was high in carbs!
I was so hungry!
It was just what the doc ordered!

Then I talked to someone else in his office!

He was eating a healthy and pretty salad,
fresh greens, spinach, small amount of fruit,
chicken chunks, some dressing, and
I saw some cottage cheese,
on top of greens under chicken!

I thought that is an interesting combo!

It looked tasty, and healthy!

Now I need to put leftover taco soup in fridge!

something reminded me of a recipe I had- baked oatmeal. And I decided to try using it in a large muffin tin to try making a breakfast muffin of sorts. It pretty much worked. I halved the recipe so they were the larger diameter but not full height. And they have plenty of sugar and some fat along with the oats. Maybe I should have put this NOT in Healthy Eating.

do you have a link to baked oatmeal recipe?

that reminds me of your method for
pre-mixing dry ingredients, saving in fridge,
then mixing with wet ingredients and baking.

Can you remind me how you do it?

It will be nice to have "healthy" muffins!

Maybe I can bake them with

I don't know where the original recipe might be linked. Sorry! It's been years. Here's one similar. Though my original baked oatmeal was done in a dish, more brownie like. Then we'd cut pieces and put milk on them in a bowl.

There seem to be many versions of 'baked oatmeal cups' online. Many use maple syrup. Mine used brown sugar. and mine used either melted butter, or oil, but said you could sub applesauce to reduce the fat content.

I added some goats milk to my nutritional shake today that I had for lunch. I used to add it and haven't for weeks as for some reason I just forgot about it.

Goats Milk is very nutritios and good for us.

I give goars milk to the cat here and my dog also. So we all get the benefits of Goats Milk.

By my standards dinner today was pretty healthy. A fried up pre made hamburger patty with sides of potato salad and canned sliced beets.

Really simple dinners are the norm these days since I try to stay with the Keto eating plan. Lunches are a doctored up nutritional drink. I start with the Garden Of Life Raw Meal and then add stuff like extra fiber and more.

Also I eat early. After my dinner meal is done I don;'t eat the rest of the night..

Tonight I did not have desert. But often I might have a yogurt or maybe a half can of apricotes.

Hi Yall! :smily

After I ate chili at home,
Mr. TT came home with...
chicken salad from
Chicken Salad Chick.
It's ok with me that I ate chili!

Since he didn't make chicken salad
from rotisserie chickens I bought,
too much sodium he said,
I googled nutrition info from
Chicken Salad Chick.
I think it's probably good,
high protein, low fat.
Sodium and fat counts go up
with cheese products,
like pimento cheese, and
fats increase in other products.

Now it's possible to check
nutrition info and count! Thumbs down
better to think of it as compare! Thumbs up

I assume most frozen dinners are higher in sodium than desired but I will never criticize for eating them now and then.

I happen to like celery, though I can't grow it. Lately, it's been way too expensive, so I buy one only every three or four weeks and use it sparingly. But this week, my grocery had big old celery - what's it called? a plant, a bunch, stalks? for 88 cents. Too tough for salad and hardly any leaves, but it made a really nice cream of celery soup.
Chopped, cooked soft; pureed in blender along with the cooking liquid. A little roux, just a dash of pepper because it's naturally salty, finish off with sour cream or yogurt. I threw in some leftover broccoli too.
Couldn't get any healthier or skinnier and it tastes good.

I rarely have frozen dinners but every once in a while I just have one. All those premade foods have too much salt so not have it too often.

I have an absolutly giant Japanese sweet potato in the oven baking right now. I just wash, stick with fork to put some holes and wrap in aluminum foil.

I gave my friend one yesterday to say you just need to try this. So she baked it but I still don;t know if she really liked ot or not. She said she loved the color but that it did not taste like a sweet potato to her.

We try to avoid processed food due to salt,
or buy lower or no salt items.

I hope some processed foods
now have less sodium, less fat, less sugar.

The food giants respond to
consumer giants who spend $$!!!

It's important to read real nutrition news,
and try to see past the ads and the fake news!

Rita, some people get focused on their ideas.
Maybe you should have told your neigbor
it was a Japanese potato instead of sweet potato!

I pull off the big ones when I'm chopping the stalks before cooking; the blender seems to take of the rest. It's one of those little baby bomb things I picked up at the thrift store for $3. Does a great job on everything. I do my bean and pea soups in there, too, because I don't like the skins.
Another good soup I learned from a friend is pureed pea and cauliflower. Kind of bland; it benefits from a sprinkle of cayenne.
