Cantaloupes start out smooth and green and then develop the textures that you associate with ripe cantaloupes. Cantaloupe can take up to 75 days in some cases, so remember that patience is key and that it will be well worth the wait! You can usually tell as a general rule that melons are ripe when their stem has dried out. Check your cantaloupe and pay special attention to the condition of the stem. You can pinch out the growing tip of the vine to keep the vine from growing any more, but without new growth and new flowers, you won't get any more melons than are already on your vines.
