I live in Atlanta GA area. I'm planting a large flower garden (for the 1st time) in a yard that's very sunny most of the day. I have roses and blazing stars planted & plan to plant a red japanese maple. What else can I plant that will stay green/pretty during the fall and winter (under 12 ft)?

Pieris has lovely leaf color and the bonus of spring flowers. You might also consider Nandina (heavenly bamboo). This plant is tall and narrow but has attractive leaves. They start out with a reddish tint, turn deep green, then a bronzy red in the fall. It's an evergreen that provides all season interest. Coral bells remain all year around and the flowers are quite attractive. Enjoy your garden!
