Should I cut off the dead and wilting leaves, and yellow leaves from all of my vegetables? Tomatoes, squash, cucumber, zucchini, etc.?

You can for aesthetic reasons, but otherwise it is unnecessary. The only reason I might remove old yellow leaves is if they had leaf disease spots all over them. Then removing the leaves may reduce the incidence of disease on the plants.
