How long and how can these seed types be stored when you're not going to need that many? I'm always having to give half of them away.

seed potatoes
onion sets
garlic bulbs

Potatoes, onions and garlic all need to go into the ground as soon as practical in your growing area. These are living plants in the resting stage when you purchase them and they need to finish out their lifecycles by being allowed to grow to maturity. If you store them rather than plant them, they'll try to sprout, run out of energy and die. You can give them away, or plant them and give away the resulting produce. (Think how popular you'll be with your neighbors if you share homegrown veggies with them!)
