Do I just have to remember when I bought it and induce it myself? Should I just let it "die"? (no water or sunlight), will it show any signs that it wants to hibernate?

Good question. Mine has been in the garage since the beginning of November (high 30's, low 40's). I checked on it a couple days ago and not only is it not showing signs of dying back but its growing a bloom stalk.

I assumed, like my Sarracenia and Darlingtonia, dormancy is induced from the beginning of November to the end of February.

I grow my VFT outdoors when temps are above freezing. In the fall, I leave them out to get a few light frosts. By that point the plants are producing their winter traps which are smaller and closer to the pot surface. I store the plants in their pots under a pile of leaves in my backyard along with a lot of other CP that need winter protection. I just uncovered all of my plants last Saturday, but did not take them out of the cage they are in (animal protection). We've just had maybe 4" of rain over the past few days. That really flushed out all of those plants!

I have stored my VFT out of their pots in bags of moist Sphagnum in the refrigerator. In that case, I remove all traps and roots from the VFT before putting them in the bags. With the refrigerator method, I take them out and repot when the outdoor temps are suitable for growing. Here's a photo of some of my VFT plants all cleaned up for refrigerator storage:
