Copper is an essential nutrient for plants but can indeed be toxic in high amounts. I'm inclined to agree with everyone that it shouldn't be a problem if plastic coated - people leave Christmas lights in trees year round and presumably the wiring in those is copper?

Afterthought edit - you can also buy copper plant labels, I have some on my daylilies:
