Welcome! I think it would kill them, they need air even when dormant. I have no experience with either plant but I've read that ginger can be kept through the winter in cold climates as a houseplant on a windowsill, or stored somewhere cool in a dormant state in dryish peat moss as you would some other tender plants with rhizomes etc.
