It is very mild and sweet but not flavorless. I don't mind the taste of a range of tomatoes.......mild to more intense.

I have just finished cutting up and began cooking a 12 quart stock pot full of tomatoes to make sauce. I know there's a couple of more pails full in the garden to be picked, but it will have to do that tomorrow.

OK, my plans changed, so I went and picked another pail full of tomatoes, I know there's another pail out there, but it's getting too hot out to mess with it right now. I'm making sauce via the pillow case methond, and will can it when it's thick enough. I get about 9.5 pints of sauce from one stock pot full of tomatoes. At least I did the last time. We'll see if that's consistant between types of tomatos. So far I've been using mostly Roma, with a couple others thrown in there as well.

I haven't done the oven one, I have too many tomatoes to fit in the oven. I think that way should be great for a small batch though, and I will try it when I have only a few to do, and want to eat it right away.

Tom, I couldn't get your link to work. I have a Squeezo and I have the meat grinder attachment for my Kitchen Aid. So I'm taking a guess here, you put the big funnel from the Squeezo on the meat grinder and run it?

Yes, if you have the meat grinder, you just need to get the squeezo parts that include the longer pointed auger, the long pointed strainer, a shorter spring axle, and the drain attachment. If you google KitchenAide Mixer Attachments, you should be able to find it. Here's a picture of the extra things to add to the grinder.

I have the stock pot full of tomatoes cooking to make sauce, and I went out and filled a 5 gal. pail with tomatoes, and another one half full. I'll have more to do tomorrow I guess. Those San Marzano Redorta's are big, and fill a pail much faster then the romas for sure. I should pic some roma's too, but I'm going to let them get nice and red on the vine for whole tomatoes.

I have not grown Romas tomatoes in many years. These days I grow Vivia Italia, which I like far far better than Roma.

I haven't done sauce myself in years either but I do stewed tomatoes with the Viva Italia plus I also eat them fresh. Unlike Romas these are good enough to eat fresh.

I know there is an Italian heirloom that people are always recommending for sauce, maybe it is those San Marzano Redorta.

Tom--how many tomato plants do you have????? I've got 12 (although there are only 2 of us in our household that eat them). We've just never had such a prolific tomato year. Pretty soon, I will be leaving them on our neighbor's porches. I just don't know what to do with them any more: I've canned bruschetta mix, salsa, whole tomatoes (with and without basil), tomato jam, and have eaten more fresh tomatoes than you can imagine!!!!

I have 27 plants! I know I've explained a dozed times how I ended up with this many, so I won't do it again. Rolling on the floor laughing The roma's were given to me Rita, I ususally don't raise them. Or if I wanted a roma type I'd get La Roma, much bigger and better flavor. But the San Marzano Radorta are from seeds from Italy, and are a huge tomato long and icicle shaped mostly, but very flavorful. I'd recommend them to people who like full flavored tomatoes. They stay a bit green on the top. Linda, I give lots of tomatoes to friends and family, and any that I can't find homes for I drop off at the food pantry. I have a lot of canning yet to do though, before I give too many away. I want to make two years worth of whole tomatoes and tomato soup. I make all plain sauce, and add what ever flavors I want later depending on what I'm making. I ususally run out of that, as I use a lot of it. As of today, I have 21 pints of sauce made. That's from about 15 gallons of tomatoes, so you know it's thick. Hilarious!

I buy my tomato plants and they have Roma and Viva Italia. But not La Roma. So I have never tried that one.

Another batch of tomatoes being processed now. It rained most of the morning, so I didn't get any picked today. Will have a lot to pick tomorrow I'm thinken!

Supposed to get rain again today. I'm really tired of the mud, wish I could send some of this rain to the areas that need it.

Except, I don't think we're getting any more for a few days (it's gone to lower Michigan now) -- thank goodness!! Hard to get anything done in the garden right now...

That's for sure, I went out and got a few egg plant and made fried egg plant for lunch, and enough to make two pans of parmesan, I'll give one pan to the neighbors. She's due to deliver this month, and I'm sure she would enjoy a break. I have tons of tomatoes to pick, the lawn needs to be mowed, and everything is too wet. I hope it dries off enough for me to at least mow the grass later this afternoon.
