Sunday I had pizza and dinner with a friend. Lefftover pizza for tonight. It might not be extra healtthy but it was extra tasty.

Last night had shrimp with a side of lima beans. I put lots of butter on the beans. Seems like a healhy dinner to me.

I also cooked yesterday so have baked chicken thighs to eat whenever I want.

I boil some for the OG when his blood-sugar is too high. Shell them immediately, because it gets more difficult when they've been cold for a while. I do 5 or 6 at a time, and he has one for lunch. I cut it in half and warm it in frying pan with very little oil, black pepper and paprika sprinkled on the bottom, so the half egg gets coated both sides.
When that gets old, I make egg salad with celery, pickles, shallots and olives.

Today I picked up a big bag of spinach. Whenever I buy one of those, he has spinach salad the same night -
The crisp young leaves, topped with red onion rings, cucumber and tomato slices, boiled egg and fried tofu cubes (or peanuts or chick peas) and a garlic-poppy seed dressing -
The rest get cooked, drained, packed into baggies and frozen in individual servings.
We're quite partial to spinach. I can't eat salad, but I like it made into a sauce and served on fusilli, with a few crumbles of feta on top.

I have had to manage to make my own dinners lately. So I had signed up for a meal delivery. Pre made ready to microwave and eat food. Delivery was supposed to be here Thursday. But got lost and did not arrive.

I called and they did tell me they would replace and that would arrive either Tuesday or Wednesday. So I will wait for and see..

Meanwhile I was trying to figgure out exactly how things work on the website. Your signed up but do not get a delivery unless ask for it. Can get the same as you had or anything else. There is a cutoff of Saturday Midnight. After that can not change. You either get food or not. Makes sence to me that after cut off no changes as they have to plan. Get ingrediants, make food and pack it.

So you need to plan a week ahead. I must have by accident asked for a new shipment this coming week. I was on the site and would have caught my mistake today but too late!!

Card charged and delivery scheduked for Friday. I will be over run with food!! Will have to freeze. Fortunatly can be frozen for weeks so they say.

Before I ordered I had no idea where they actually are but now think they are on the West Coast in California. They do guarantee the food shipped all over the country. But I am not thrilled that it is so far away.

Will look for a closer option but not right away because I should have plenty to eat for awhile.

Our friend was thinking of doing that a while ago. I looked at the pamphlet. The menu seemed okay, if not extensive, but the pictures of meals... well, the side dishes were pretty heavy on carrots and potatoes and the gravy looked a bit samey. The food would be delivered once a week in freezer packs. OK
But then you start figuring the cost: restaurant price for humdrum cuisine that you have to freeze, heat and clean up after. It seemed she would be better off to buy frozen meals in the supermarket.
As things turned out, we never found out. She moved into an assisted living apartment soon after, and they have a dining room.

I must have looked at at least 2 dozen of these meal delivery places. Menues were certainly better at some than others. These are precooked meals not meal kits were you do your own cooking. I do not want to do any cooking!!!

So no great mess or cleanup involved. And prices varied quite a lot for place to place. However it looks like a quite small amount of food. Certainly no more than a standard TV Dinner. But TV Dinners loaded with salt and preservatives which there is not in these meal service foods.

So I received an update from Modify Health. My replacement meals for the missing box are shipped and expected to arrive tomorrow. They did not charge so this is good customer service.

I think I'm being healthy with a small plate of spaghetti, minimal meat, and sided with sauteed spinach and cooked beets. I'm the only one who eats beets here.

I love beets. Beets are tasty.

Sally, your meal sounds healthy to me. I love beets, that is when you can get fresh new ones, not the very old ones. I like home made pickled beets too, store bought ones are too soft and they put cloves in them.😝

Rita, I hope you like your ready meals. My sister and BIL tried some of those ready meals and found the portions were very small and the menu pretty boring.

Understood. I think meal kits are ridiculous, actually. It's not that hard to buy your own groceries - and that's pretty much what they amount to, overpriced home-delivered groceries. Except that you can't take advantage of sales or change a side dish for someone who's allergic to or doesn't like some ingredient; no seconds or leftovers for next day's lunch.

However it looks like a quite small amount of food. Certainly no more than a standard TV Dinner.

That was my observation, too. My neighbour wouldn't have minded that, as she's a little old lady with little appetite.
But TV Dinners loaded with salt and preservatives which there is not in these meal service foods.

For dinner, I had corn on the cob with a bun-less turkey burger with spicy buffalo sauce. It was good and filling. I've been trying to eat vegetables during breakfast, lunch, and dinner. Broccoli has become one of my favorite veggies to steam and eat. I have a pampered chef microwave steamer that works wonders. I use it so much.

I have to admit that in my old age I'm conceding to "less work" in the kitchen. I try to have a salad for the last meal of the day. I've been buying those bagged salad deals with the dressing and "add-ons" that are with it. Works for me. I hate chopping lettuce, and getting carrots, etc, and nothing ever ends up getting used at the same time. Yes, I know, I'm paying for the convenience. Another thing I've started getting is those packets of different "flavors" instant mashed potatoes. I use milk, not water, when I make them, and add a snitch of butter. Enough for us for a meal.

Anna, whatever works for you. I spend less time cooking as well, I mostly keep it simple, especially since my feet hurt, then my back. We don't like instant potatoes, but my daughter uses them all the time.

I like the convenience of instant potatoes, even if they aren't quite as good. Maybe they'd be as good if I just added a little more butter, or sour cream, or etc.
I like the potato casseroles too that come as a box of dried potatoes and packet of dry stuff.
I'm having a protein fruit drink now. I shopped and on leaving started a hint of that low blood sugar feeling and thought I better crack one open and get some sugar and fluid. My breakfast pastry and one slice of sausage wasn't holding me.
Plant it and they will come.
